There are few foods as divisive as the infamous "king of fruits." Travelers in Southeast Asia quickly learn why durian (Metaflora plant #803) is the stuff of legend: its smell is so powerful, it's been banned from hotels, taxis, and public transit in cities like Singapore and Bangkok. But what gives durian its reputation as the world's stinkiest fruit?
Durian's aroma comes from a complex cocktail of over 50 different volatile organic compounds. Chemists have identified compounds that smell like onions, rotten eggs, caramel, and even turpentine. This wild combination is why people compare the scent to everything from raw sewage to sweet almond custard, sometimes in the same bite! The reason durian evolved such a pungent perfume is still up for debate, but scientists think it's to attract animals like elephants, rhinoceroses, and orangutans, who eat the fruit and spread its seeds far and wide.
Despite its stench, durian is beloved by millions for its custardy, almond-like flavor. Adventurous eaters describe it as "eating cheesecake in a sewer," while others can't get enough of its rich, creamy flesh. Durian is so culturally significant that entire festivals are held in its honor, and there are over 500 varieties cultivated across Southeast Asia.
